I had to practice these a few times before I found the right ones that actually tasted ok. These taste delicious! They are low carb as well, high in good fat, so one is very fulfilling. A great snack mid day to ensure you don’t overeat at dinner time. Eat it slowly, and you will see what I mean about it being so rich.

Here it is..so simple!!
1/3 cup + 3 tablespoons coconut flour – this is what makes it filling!
1/8 teaspoon baking soda
2 tablespoons of raw honey
1/2 cup of coconut milk (whatever you have in your fridge is fine)
3 eggs – so makes them high protein as well!!
1/2 teaspoon of vanilla
2 tablespoons of coconut oil. I use coconut manna because it is the best thing ever! I also ate half of the jar while these were baking…..
1/4 cup of fresh blueberries
Mix coconut flour, and baking soda in a bowl.
In a separate bowl, whisk together the honey, milk, manna, eggs & vanilla extract.
Add coconut flour mixture to the wet ingredients once they are all whisked together.
Fold in blueberries…gently!
**** THE BATTER WILL SEEM DRY. DO NOT ADD MORE MILK. THIS WAS MY MISTAKE THE FIRST TIME I TRIED THEM AND THEY WERE BAD****
You will need to use your hands to make balls to place in muffin pan cups. Bake 350F f0r 20-25 minutes or until the tops have a nice golden brown look to them. Let them cool completely before removing them from the cup as they are a bit crumbly.
This recipe yields 6 muffins so I doubled the recipe.
These are so good…will be making them again!!!
