Easy Tuna Pasta

Hey my friends!

I know that meal prep can be a bit daunting, especially figuring out what to make.

So, I’m sharing with you one of my favourite meals ever!

Quick, minimal ingredients, packed with protein, healthy,  and of course delicious!

It does take a trip to your local Italian market for their famous tuna, but once you have that, the rest is simple! 

Trust me when I say, you’ll love this - even better the next day as leftovers. #mealprepping

Easy Tuna Pasta

Ingredients:

  • 1 full Red onion 

  • 1 full Yellow pepper 

  • 1 large package cherry tomatoes 

  • 3tbs Capers

  • 5 x 160g Canned Italian olive oil tuna 

  • 1/4 cup Olive oil

  • 4-5 cloves Garlic  

  • 1/4 cup Kalamata olives 

  • 1/2 tsp Red chilli flakes 

  • 1 bundle Cilantro  

  • 1/4 cup Parmesan cheese 

  • 400g Gluten free linguini ( i prefer gluten free noodles, but use your preference)

1. Bake at 350f yellow pepper, red onion,  garlic, chilli flakes for 30 minutes. Add cherry tomato, bake for another 10-15mins. 

2. In a different container add tuna (including oil) and capers and bake for 15 mins at 350f.        

3.Cook pasta as per pasta instructions

4. Once everything is cooked and warm, add all ingredients in a big bowl and stir well. 

5. Plate, adding fresh cilantro and Parmesan.

Feeds 4-6 people
